6.01 Pork Luck

Word has gotten out among JL’s friends that on Sunday evenings he enjoys a homemade meal after golfing, while his fellow tee-mates return to their apartments to order take-out. Always loving company to feed, Danielle and I decided to establish a monthly Sunday Dinner date for JL’s whole group.

Even better, it turns out that JL’s friend, Brad, secretly loves to cook, and will now contribute as a guest chef.

Picking a Theme
The weather has been getting warmer and I am dying to use my new cast iron grill pan to make some summer-inspired fare. To kick start our first dinner collaboration, and get some indoor grilling in, I selected an obvious male crowd pleaser: Pork


Bacon wrapped dates, stuffed with Manchego cheese
Fresh cantaloupe wrapped in prosciutto

First course: Flounder Ceviche

Sadly I can not give you the recipe, but I can confirm that it contained, flounder, onions, garlic, cilantro, corn and lime juice.

Pork Sausage

1 lb ground pork
1/3 of a small red onion, finely minced
1/2 green apple, cored and chopped
2 cloves garlic, minced
1/3 cup pistachio nuts, coarsely ground
1 tsp cumin seed, ground
1/2 tsp red pepper flakes
1 tsp sea salt
1 tsp fresh cracked pepper
1 1/2 tsp paprika
1/2 tsp cayenne pepper
1/3 cup cider vinegar
fresh parsley, coarsely chopped

Combine all ingredients in a bowl and cover with plastic wrap. Marinate in fridge at least 1 hour.
Form sausage into patties and grill until cooked through. Balsamic should slightly caramelize.
Serve with whole grain mustard

Grilled Chili-cheese grits

1 cup coarse ground yellow corn grits (not polenta)
1 small chili pepper, finely diced
4 cups water
1 tsp salt
1 tsp pepper
1/2 tsp red pepper flakes
1 cup grated cheddar cheese

Bring water to boil in a large pot with salt, pepper and red pepper flakes.
Add chili and sprinkle in grits using a fork to quickly break up any lumps.

Cook, stirring constantly, over medium heat 5 minutes, until all water is absorbed and grits begin to bubble. Be careful of bubbles as grits mimic hot lava at this stage.

Remove from heat and stir in cheddar cheese until melted.
Pour grits into a small casserole dish and let cool 1 hour.

Slice grits into 3″ squares and grill 2 minutes per side, serve with sausage.


JL managed to deliver a standard two-helping performance. He may just be shy in front of his friends…

On arriving at our apartment, Mike proudly announced that he wore elastic pants in preparation for the meal.  He only managed 4 helpings, but maintains that he only stopped at 4 helpings because we ran out of food…
